3 in 1 Cookies

A base recipe for cookies, choose your flavour, or divide the mix in three and make three different flavours in one batch! Remember, if you divide the mix in three, use only one third of the flavour ingredients in each third of the base mix.


  • 110g butter*
  • 50g white sugar
  • 110g light brown sugar
  • 1 egg
  • 220g flour**
  • ¾ tsp vanilla powder
  • ½ tsp baking soda
  • Pinch of salt

*Sunflower spread or other dairy free substitute.

**The flour I use is Doves Farm White Bread Flour - a mixture of rice, potato and tapioca flour.

Flavour options

Chocolate chip

  • 100g chopped dark chocolate - (check if dairy free, if necessary)

Coconut and Raisin

  • 50g coconut flakes (toasted optional)
  • 75g raisins

Rolled Cinnamon

  • 75g white sugar
  • 1 ½ tsp cinnamon


  • Mix butter and sugars together
  • Add egg and mix thoroughly
  • Stir in remaining ingredients
  • Choose flavour:
    • Chocolate – stir chocolate into mix
    • Coconut and raisin – stir into mix
    • Rolled cinnamon – mix sugar and cinnamon together and leave in a separate bowl
  • Put mixture in the fridge for 1 hour
  • Pre-heat oven to 180c fan and prepare two oven trays with baking paper
  • Roll walnut sizes balls of cookie mixture and flatten slightly with the palms of your hands, place on the baking paper with 4cm space around each cookie (use extra flour to stop the mix from sticking on your hands)

If making rolled cinnamon cookies, roll the ball of cookie mixture thoroughly in the cinnamon sugar mix before flattening

  • Do this with the rest of the mix
  • Put both trays in the oven, one in top third and the other in the bottom third
  • Bake for 10 minutes, until the outside of the cookie feels slightly firm (you will probably need to leave the tray underneath in the oven for two minutes more)
  • Leave the cookies on the oven tray for one minute before transferring to a wire rack to cool completely
  • Share, eat and enjoy!
