Pretty Pumpkin Pie (without the pumpkin)
(Better late than never..) For Halloween this year, our wonderful friends hosted a party. Amongst their chaotic work schedules they managed to decorate their house and garden, dress-up and prepare a party feast for all their guests.
Earlier in the week, K had asked me if I could tolerate pumpkin. Unfortunately pumpkin is amongst two other delicious orange vegetables (sweet potato and butternut squash) that I cannot tolerate.
'Not to worry' she said 'I'll use carrot instead'
I am so inspired by people using their creativity with cooking, recipes don't have to be by the book. If you want to change it, then change it! The more you cook, the more you learn about food and the easier it becomes to find suitable substitutes - the only way to learn, is to try.
K even made time for a test bake, to make sure the Aiysha friendly pastry worked. It rivalled any pastry I have ever made and there wasn't a soggy bottom in sight! The pie was decorated with a beautiful pastry edge, a perfect finishing touch. The filling was delicious, soft and light in texture. It didn't much taste of carrots, in fact I think it tasted more like pumpkin (or well, at least how I remember pumpkin to taste) or perhaps it was the orange colour confusing my brain!
Friends who bake the Aiysha friendly way are angels to me. Thank you for my pie K, do I have to wait for Halloween next year for another?!
